Wild Rice & Dried Fruit Salad
I originally made this salad for Christmas Day celebrations, but I think this salad can be served any day of the year. It's filled with nutrition and tastes really good - like REALLY good.
The only thing that takes time is the preparing of the wild rice. It's totally worth it though because of the beautiful nutty flavor.
Why choose wild rice? It's gluten free so it's friendly for most people's tummies. Wild rice also contains ten times more protein than brown rice. Not to mention that it contains way more antioxidants than other rice types.
Wild Rice Salad

1 cup wild rice, soaked overnight
1 1/2 cup water with vegetable broth
2 stalks celery, finely chopped
1 cup parsley, finely chopped
1 garlic clove, crushed
0.5 cup dried goji berries
0.5 cup dried currants
0.5 cup dried apricots
0.5 cup shaved almonds
1 lemon, only zest
2 tbsp olive oil
1 tbsp balsamic vinegar
Rinse and place rice in a medium sized pot with the broth water.
Bring to the boil, then reduce heat to low. Cover and let simmer until the water has absorbed - aprox. 45 minutes. Remove from heat and set aside.
In a large bowl combine celery, parsley, garlic, lemon zest and dried fruits. Add in the rice and toss.
Before serving add in the olive oil and balsamic vinegar.
