Pink Pitaya Oats

Dream oats - but in real life. That's what's up next. 

Pitaya has the most gorgeous deep pink colour. I'm obsessed. This beauty of a fruit is usually used in smoothies - it's almost the new acai. I on the other hand felt like trying something a little bit different. I added my hot pink smoothie to my oats and it turned out to be delicious. 

Pink Pitaya Oats

vegan ● rfsf ● hclf

2 bananas

1/2 pink pitaya

1 mango cheek

1 cup coconut milk

1 cup oats

  1.  Start by blending the banana, pitaya, mango and coconut milk in a blender. You should end up with a pink smoothie.

  2.  Add oats in a saucepan. Pour in the pink pitaya smoothie.

  3. Bring to the boil. Once boiling turn the heat down and let simmer.

  4.  Let the oats cook until they have fully absorbed the pink smoothie.

  5.  Ready to serve!
