Sweet Potato Brownies

My next recipe could change your life, forever. It for sure did change mine, because these will be the only brownies I'll be making in my kitchen from now on. 

There isn't a single bad ingredient in my sweet potato brownies. They are made from plant based wholesome ingredients and they taste divine. 

It took me some time to perfect the recipe - I wanted chocolaty, rich and very gooey brownies. Because they are the best kind of brownies. Finally I succeeded. 


Sweet Potato Brownies

vegan ● rfsf ● gf


1 large sweet potato

10 medjool dates

1/2 cup buckwheat flour

1 cup almond meal

4 tbsp cacao

1/2 cup maple syrup

pinch of salt

1/2 tsp vanilla extract

1/2 cup macadamias

2 tbsp coconut milk


  1. Peel the sweet potato and cut into chunks. Then boil until soft.

  2.  In a food processor process the cooked sweet potato with pitted medjool dates into a smooth orange coloured puree. 

  3.  In a large bowl mix all of the dry ingredients, macadamia nuts and spices.

  4.  Add in the sweet potato puree and coconut milk. You might find it helpful using your hands when combining the ingredients together.

  5. If the dough seems dry add in a few drops of water. You want the consistency to be quite gooey.

  6.  Spread out the brownie batter in a baking dish lined with baking paper.

  7.  Bake the brownie in preheated oven at 180 degrees celsius for about 20 minutes. Keep checking that the brownie doesn't get too dry, but you also don't want it to be too gooey.

  8.  Let cool and cut into squares. Serve hot or cold - whatever way you prefer.
