3 Greens Pesto Pasta

Pesto is one of my all time favorites and when you combine it with pasta it's literally heaven on a plate. 

Since starting a plant based life style I feel like there aren't many pesto options without dairy (all that cheese) on the market. This is why I wanted to try make my own. I must say I pretty much nailed it with this 3 greens pesto that I'm about to share with you.

Today's tip: Thank you nutritional yeast for being such a great substitute for grated cheese. There's no need to add any parmesan cheese to your blend when you can add something so nutritional yet tasty. Nutritional yeast is a great source of B12 for us vegans - incase you didn't know.

3 Greens Pesto Pasta

vegan ● b12 source

5 broccolinis

1 zucchini

2 handfuls spinach

1 garlic clove

1 tbsp olive oil

1 tbsp nutritional yeast

1 tbsp sunflower seeds



1 handful mushrooms

pasta of choice 

  1. Start by chopping and then boiling the broccolinis and zucchini. Rinse.

  2. Place the broccolini, zucchini and all the other ingredients in a food processor. Process until you end up with a pesto like consistency.

  3. Boil pasta and mushrooms together. When cooked drain and move pasta and mushrooms back into saucepan. Add the pesto and combine over low heat.

  4. Ready to serve. Drizzle some sunflower seeds on top.

Eat yo' greens.
