Chocolate Maca Overnight Oats with Chocolate Cashew Cream

Anyone else who can't stop eating certain foods? I get periods when I can eat the same breakfast day in and day out. I'm currently obsessed with overnight oats, and especially my chocolate overnight oats that I will be sharing in this post. To me overnight oats are the perfect solution for lazy mornings or mornings when I simply don't seem to have enough time.

What are overnight oats? I'm sure you've heard of this way of eating your oats before but I'm happy to explain. You simply add oats and other goodies you like in a jar and then let them soak in your preferred plant milk overnight. It's truly as simple as it sounds. You're breakfast is already done and ready for you to eat first thing in the morning.

Chocolate Maca Overnight Oats with Chocolate Cashew Cream

vegan


1 cup oats

0.5 cup buckwheat groats

2 tbsp chia seeds

2 tbsp hemp seeds

2 tbsp cacao

1 tbsp maca powder

pinch of vanilla powder

small handful coconut flakes (optional)

water


  1. Add all the dry ingredients into a big jar. 

  2. Add water just to cover.

  3. Mix well with a spoon.

  4. Let the mixture sit in the fridge overnight.

  5. Serve in the morning with various fruit (melted raspberries are my fave) and chocolate cashew cream. 


 

Chocolate cashew cream

vegan


1 cup cashews

2 tbsp cacao

1 tbsp maple syrup

pinch of vanilla

water


  1. Add all the ingredients into a high speed blender.

  2. Add water to just cover the cashews.

  3. Blend on high speed until you have a smooth cream.

  4. Scoop out and store in the fridge.

Now I'm off to make another batch of these overnight oats. I'm already excited for tomorrow's breakfast!
