Christmas Rice Porridge

Here in Scandinavia we eat lots and lots of rice porridge during Christmas. We tend eat so much of it that we get sick of it until next Christmas. That's why we don't tend to have it at any other time of the year.

I started having rice porridge already a few weeks ago and if you haven't jumped on the train yet here's a recipe for you to try. The traditional version isn't vegan, but I've kindly made this very delicious vegan version for you.

Traditionally we eat our rice porridge warm, but I kind of like it cold as well. You choose how you like it. Another tradition is to hide an almond into the porridge batch and the one who finds the almond either gets a gift or good luck. Others believe the person who finds the almond will get married next year.

Christmas Rice Porridge

vegan ● total time: 40 minutes ● servings: 2


2 cups porridge rice

2 cups oat milk 

2 cups water

pinch of salt

pinch of vanilla

0.5 tsp cinnamon

0.5 tsp cardamom


  1. Add the rice to a pot together with the spices and the liquids.

  2. Bring to boil and then let the porridge simmer on low heat for about 40 minutes.

  3. Remember to stir.

  4. You might need to add in more liquid, either water or milk, as the porridge cooks.

  5. After 40 minutes your porridge should be nice and creamy.

  6. Serve warm or cold together with lots and lots of cinnamon.
