Golden Saffron and Turmeric Rice

This is my first Easter as a vegan (I was already vegan last year but I didn't celebrate Easter in any way) and I'll be spending a lot of time with my family around the dining table. As most of the traditional Easter foods are heavy on animal products there won't be that much for me to eat. That's why I'll be pre-cooking a few dishes that I can bring with me - both for myself and my family to enjoy.

One of the dishes I've made is a rice dish with saffron and turmeric to give it a beautiful yellow colour. I've also added in some peas and asparagus to give the dish Spring green vibes. 

Golden Saffron and Turmeric Rice

1 cup basmati rice

2 cups water

1 onion

2 cloves garlic

2 pinches saffron

1 tsp turmeric

2 tsp cumin

2 tsp curry powder

salt

pepper

6 asparAgus stalks

0.5 cup frozen peas

juice of half a lemon


  1. Start by chopping your onion and garlic and add them into a saucepan together with the spices on low heat.

  2. Add in the rice and water as well. 

  3. Let simmer for a while.

  4. Once the rice is almost cooked but there is still some water left add in the asparagus stalks (chopped) and frozen peas.

  5. Let cook until rice is all done.

  6. Once cooked squeeze in half a lemon. 

  7. Serve together with fresh parsley and whole cooked asparagus if you like.
