Mermaid Porridge Bowl

Today I want to talk about one of my favourite ingredients in the kitchen at the moment. You've probably heard of matcha, but what about blue matcha?

Like the green matcha that most of us are familiar with, blue matcha is also a natural tea powder. This finely ground tea powder is made out of a flower called Clitoria ternatea also known as Butterfly pea. The flowers are beautifully blue and they give the tea it's natural blue colour.  

I personally like the taste of blue matcha more than the green one. It's not as bitter as the green tea powder sometimes can be. Blue matcha simply is the perfect natural food colouring whenever you want to create something blue or just make yourself a simple matcha latte. 

Today's recipe might use very simple ingredients, but the blue matcha powder takes it to a whole new level. This blue porridge is what mermaids would eat for breakfast.

Mermaid porridge bowl

vegan ● SERVINGS: 1-2 TIME: 20 min


1 cup oats

2 cups water or plant based milk

2 tsp blue matcha powder

1-2 tsp coconut sugar

pinch of vanilla


  1. Add the oats and liquid into a pot.

  2. Bring to the boil and turn down the heat.

  3. Add in the matcha powder and spices.

  4. Boil until oats are cooked.

  5. Top with berries and coconut flakes (optional).
