Too Goodio to Be True
It's always fun to receive a package on the mail and especially fun when it's filled with chocolate. I did a little happy dance when the doorbell rang and a box filled with chocolates from Goodio arrived at my doorstep. Goodio is a Finnish chocolate company that makes healthy and delicious raw chocolates in Helsinki. I'm so happy something this good comes from my home town!
Another fun thing is that Goodio recently opened a health food cafe in the heart of Helsinki. Down by Kanavanranta to be more exact. They sell smoothie bowls that are like the ones in Australia, as well as home made vegan ice cream. I've visited the place twice and I'm loving the vibes. When I'm back in Helsinki you all now know where to find me.
Back to the chocolates. Not only do they taste amazing - I think the coconut and wild blueberry are my personal favourites - but they also come in the pretties packaging. As an aspiring graphic designer I'm a sucker for beautiful packaging and I can only hope that I one day get to work and design for companies as inspiring as Goodio. Hire me please?
Next up I'll share two easy recipes created with Goodio's chocolates. The first one can be done by anyone, it's that simple.
Coconut Chocolate Bites with Cashew Butter Heart
48 g goodio coconut chocolate
Start by melting the chocolate in a bowl over hot water.
Once the chocolate is melted get some chocolate moulds and fill them half way. Ice cube trays also work for this.
Add 0.5 tsp of cashew butter in each mould.
Then pour over the rest of the chocolate on top of the cashew butter.
Sprinkle with coconut flakes.
Set in the freezer to set.
Once the chocolate has fully set take the chocolate out of the moulds.
Enjoy every bite!

This second one is a little bit more time consuming, but still very easy. I guarantee you'll love my next treat.
Pink Bounty Bites
1 cup shredded coconut
1 tsp freeze dried beetroot powder
pinch of vanilla
1 tbsp date syrup
0.5 cup coconut cream
2 heaped tbsp coconut oil (melted)
48 g goodio arriba chocolate
48 g goodio wild blueberry chocolate
Start by adding the coconut, beet powder and vanilla in a bowl.
Then mix in the coconut cream (leave the water out), date syrup and melted coconut oil.
Mix them well until you end up with a thick pink coconut mixture.
Set the mixture in the fridge for about 10 minutes to make it easier to work with.
After 10 minutes you can shape small coconut logs and then place them on a tray in the freezer.
Meanwhile melt the chocolate in a bowl over hot water.
Once the chocolate is melted and the coconut logs are set you can dip them in the chocolate.
Once all the coconut logs are covered sprinkle them with some red berry powder or coconut flakes (optional).
Set the bounties into the freezer so the chocolate sets.
They should be ready after 30 minutes. Enjoy!
