Matcha Pancake Pizzas

I'm back with a recipe for you and it's prefect for the weekend. This is something I've been wanting to make for ages, but I simply haven't gotten around to it. Well, finally! I'm now sharing the recipe for sweet matcha pancake pizzas for you to enjoy. I reckon they make the perfect Sunday breakfast, but you could have them any day of the week at any time. I guarantee that you can't go wrong with this super simple recipe. Enjoy darlings!


Matcha Pancake Pizzas

vegan ● Total time: 30 min ● Serves: 2 

1 banana

1 cup buckwheat 

2 tsp matcha maiden matcha powder

1 tbsp chia seeds

pinch of vanilla

cinnamon (optional) 

cardamom (optional)

1 cup coconut milk

+ coconut oil for frying

  1. Start by mushing the banana in a bowl.

  2. Add in the dry ingredients.

  3. Add in the coconut milk and mix well until you have a thick batter.

  4. Heat a small frying pan and add some coconut oil.

  5. Pour in half of the mixture and form a large round pancake pizza base.

  6. Flip the pancake once you see bubbles.

  7. Serve with your favourite sweet pizza toppings! See my suggestions below. 


I recommend serving these pancakes either with a melted chocolate or chia raspberry jam base. Then top with berries, banana buttons, coconut flakes, cacao nibs, activated buckwheat and a melted chocolate drizzle. So ridicciously delicious!
