Raw Chocolate Doughnuts

I'm going to completely honest with you today when I say that I do not like doughnuts. You see I'm not a big fan of that fluffy deep fried pastry. It just puts me off. Not to mention the glazing. Yuk. I hope you don't hate me if you're a doughnut lover. I guess there would be more doughnuts left for you to eat, right?

Listen to me though. I don't dislike all kinds of donuts. Not at all. I've recently found myself munching on some raw vegan ones - nope this doesn't mean that I'm eating raw doughnut dough. That would be very unpleasant. 

This is what I'm talking about to be more exact. Doughnuts with a raw date and nut base, then finished off with a dark chocolate glaze and some freeze dried strawberries. I can guarantee you that these round fellas are addictive. 

Raw Chocolate Doughnuts

vegan ●raw ● rfsf ● gf

1 cup almonds

2 cups dates

2 tbsp cacao 

1 tbsp maple syrup 

toppings - melted dark chocolate + freeze dried strawberries

  1. Add all of the donut ingredients in a food processor. Process for a few minutes until you have a gooey 'dough'.

  2. Form little balls of the dough, they should be about the size of a bliss ball. Then press them flat like a cookie and using your finger press a hole in the middle. 

  3. Then put the donuts in a fridge to set while you melt some dark chocolate. I melted about 1 cup of dark chocolate buttons in a bowl over boiling water. 

  4. Dip the donuts in the dark chocolate and sprinkle some crushed freeze dried strawberries on top. Let your partner lick the left over chocolate from the bowl - my boyfriend was very pleased. 

  5. Let the chocolate topping set in the fridge for a few moments.
